Herb-studded roast loin of pork
Herb-studded roast loin of pork with apple & cider gravy.
Ingredients
- 1.8kg piece of rolled and tied pork loin with the skin scored
- 2 garlic cloves, sliced into thin slivers
- small bunch rosemary, broken into small sprigs
- 3 bay leaves, torn
- 1 onion, roughly chopped
- 1 large carrot, chopped
- 1 Bramley apple, peeled, quartered, cored and roughly sliced
- 1 tbsp sunflower oil
- 2 tbsp plain flour
- 100ml good quality cider
- 500ml vegetable or chicken stock
Method
- If you have time, rub salt in the pork skin 2 hours before cooking and leave it uncovered in the fridge. Heat the oven to 230C/210C fan/gas 8. Turn the pork rind-side down and with a small knife make about 6 deep incisions along the meat. Poke a sliver of garlic, a piece of rosemary and bay in each incision and turn the pork the right way up. If you didn’t salt the pork earlier salt the skin now.
- Mix the carrot, onion and apple and scatter along the middle of a shallow roasting tray to make a bed for the pork to sit on. Sit the pork on the vegetables and rub the skin with the oil. Place the pork in the oven and leave for 15 mins then turn the heat down to 180C/160C fan/gas 4 and continue to roast for 1hr 30 mins. If after this time you don’t have brilliant crackling turn the heat up again and check every 5 mins until the skin has crackled.
- Remove the pork from the roasting tray to a board to rest and pour off all but about 2 tbsp of fat from the tray. If your tray is robust enough to go on the heat then do so, if not scrape the contents into a shallow saucepan and place on the heat. Stir the flour in with the veg and cook until you have a mushy, dark amber paste then splash in the cider and bubble down to a thick paste again. Pour in the stock and simmer everything for 8-10 mins until you have thickened gravy. Strain the sauce into another saucepan pushing as much puréed apple as you can through the sieve. Simmer again and season to taste.

Russia 'Arming Thugs' Blamed For MH17 Crash.
uk.David Cameron says if rebels downed the Malaysia Airlines plane it is a "direct result" of Russian interference in Ukraine.
David Cameron has raised the prospect of further sanctions against Russia as anger grows over the apparent shooting down of flight MH17 by pro-Moscow separatists.
The Prime Minister said Europe and the West must "fundamentally change our approach" unless Russian president Vladimir Putin alters his stance.
All 298 people on board the Malaysian Airlines jet, including 10 Britons, were killed when it came down near the village of Grabovo, in eastern Ukraine last Thursday.
It had taken off from Amsterdam a few hours earlier and was heading for Kuala Lumpur.
Writing in the Sunday Times Mr Cameron said: "The growing weight of evidence points to a clear conclusion: that MH17 was blown out of the sky by a surface-to-air missile fired from a rebel-held area.

Lewis Hamilton gets five-place grid penalty for German GP
Lewis Hamilton will start the German Grand Prix from 20th on the grid following a five-place penalty for changing his gearbox.
The part was damaged in the Mercedes driver's crash in qualifying,which was caused by a brake failure.
Mercedes technical boss Paddy Lowe said the team had "a brake solution we're happy with and Lewis will start 20th".
The team decided against starting him from the pit lane in the hope he can make up positions at the start.

Prince George: Photo released to celebrate prince's first birthday shows him walking,
Prince George shows he has got the hang of walking in a new picture released by parents Prince William and Catherine to mark the future king's first birthday.
The little boy, wearing striped dungaree shorts over a navy blue top, is pictured confidently on his feet with his arms outstretched and his eyes fixed on his destination.
The photograph was taken a few weeks ago at London's Natural History Museum where the Duke and Duchess of Cambridge took their son to visit the Sensational Butterflies outdoor exhibition.
"Prince George was very lively and very sure of himself and confident - a very determined young boy," said John Stillwell, a photographer with the Press Association wire service who took the picture.
George, who is third in line to the throne after his grandfather Prince Charles and father Prince William, will spend his birthday at home in Kensington Palace.
"The family are going to be marking it privately with close family and friends at Kensington Palace," a spokeswoman said.

Nico Rosberg claims German F1 Grand Prix pole position as Lewis Hamilton crashes in qualifying.
Nico Rosberg grabbed pole position for his home German Grand Prix for the first time on Sunday morning, taking advantage of a 260kmh crash by his Mercedes team-mate Lewis Hamilton.
Rosberg now has a 5-4 advantage over Hamilton in poles this year and he has perfect opportunity to regain the momentum in their duel for the drivers' title.
Hamilton emerged shaken from his brake failure crash. But the accident was a major setback after he had reduced Rosberg's lead to just four points with a victory in the British Grand Prix where the German retired.
Hamilton spun into the barriers heavily at the Sachskurve, with seven minutes of the first qualifying session remaining. The right front brake disc of his Mercedes failed as he attempted to slow from an estimated 260kmh.
"I hit something," Hamilton told the team by radio. "I hit... hit the brakes - the brakes failed."
Hamilton was winded and shaken by the impact but climbed from his car and was able to walk away after a visit to the circuit medical centre.
The 2008 world champion, will start Sunday's race in 15th position on the eighth row.
Gaza conflict: war.
Gaza conflict: Israel expands ground offensive with no sign of ceasefire.
Israel says it is expanding its ground offensive into Gaza while militants keep up rocket fire into the Jewish state with no sign of a diplomatic breakthrough to end the fighting that is reported to have claimed 345 Palestinian lives and seven Israelis.
Israel is reporting half of Hamas's rocket supply has been used or destroyed and the additional forces will seek to secure more supplies by destroying a series of tunnels out of Gaza.
The fighting is reported to be the worst conflict between Hamas and Israel in two years.
Gaza residents are saying episodes of land and naval shelling were the heaviest in 13 days of fighting.

Malaysia Airlines MH17: Journalist describes grim scene, sees no sign of tampering with evidence,
A journalist has described "hellish scenes" at the crash site of Malaysia Airlines flight MH17 but says he has seen no signs of separatists interfering with evidence or tampering with bodies.
David Ferris visited the crash site on Saturday morning (local time), before the arrival of a team of monitors from the Organisation for Security and Cooperation in Europe (OSCE).
"It's still very grim,"
"There are, at least at that particular location, two places where the wreckage is concentrated.
"There is a large area of charred aeroplane parts and charred earth ... [and] another area, which is a hellish scene – just body parts and mangled corpses and cadavers twisted in unnatural ways.
"[There are] a lot of personal effects scattered about.
"It's still very devastating. It looks like how it did the evening it happened."

Pot-roast beef with French onion gravy.
Ingredients
- 1kg silverside or topside of beef, with no added fat (see tip, below)
- 2 tbsp olive oil
- 8 young carrots, tops trimmed (but leave a little, if you like)
- 1 celery stick, finely chopped
- 200ml white wine
- 600ml rich beef stock
- 2 bay leaves
- 500g onions
- a few thyme sprigs
- 1 tsp butter
- 1 tsp light brown or light muscovado sugar
Method
- Heat oven to 160C/140C fan/gas 3. Rub the meat with 1 tsp of the oil and plenty of seasoning. Heat a large flameproof casserole dish and brown the meat all over for about 10 mins. Meanwhile, add 2 tsp oil to a frying pan and fry the carrots and celery for 10 mins until turning golden.
- Lift the beef onto a plate, splash the wine into the hot casserole and boil for 2 mins. Pour in the stock, return the beef, then tuck in the carrots, celery and bay leaves, trying not to submerge the carrots too much. Cover and cook in the oven for 2 hrs. (I like to turn the beef halfway through cooking.)
- Meanwhile, thinly slice the onions. Heat 1 tbsp oil in a pan and stir in the onions, thyme and some seasoning. Cover and cook gently for 20 mins until the onions are softened but not coloured. Remove the lid, turn up the heat, add the butter and sugar, then let the onions caramelise to a dark golden brown, stirring often. Remove the thyme sprigs, then set aside.
- When the beef is ready, it will be tender and easy to pull apart at the edges. Remove it from the casserole and snip off the strings. Reheat the onion pan, stir in the flour and cook for 1 min. Whisk the floury onions into the beefy juices in the casserole, to make a thick onion gravy. Taste for seasoning. Add the beef and carrots back to the casserole, or slice the beef and bring to the table on a platter, with the carrots to the side and the gravy spooned over.

Dad Who Beat Son's 'Sex Attacker' Not Charged.
A father who left his son's alleged sex attacker in a "puddle of blood" was simply protecting his son, police say.
A Florida police chief says he has no problem with a dad who severely beat up a man he claims to have caught sexually assaulting his 11-year-old son.
Mike Chitwood said the father of the alleged victim did what any father would do, and would not face charges.
Daytona Beach police were called by the man on Friday to report he had come home to find his son being assaulted.
He could be heard telling the police operator he had left the attacker "nice and knocked out" and "in a puddle of blood" on the floor.
Officers arrived to find the alleged abuser, 18-year-old Raymond Frolander, unconscious.
Frolander was taken to the hospital and then arrested.
Chief Chitwood said Frolander admitted to sexually abusing the boy for the past three years.
And he said the father would not be charged, because he was protecting his son as a crime was being committed.
"I think the father did what any father wanted to do," he said.

Britain Warns Putin: World's Eyes Are On You.
The PM calls world leaders to discuss a rethink on relations with Russia as rebels allow officials to move bodies from crash site.
Foreign Secretary Philip Hammond has warned Vladimir Putin the "world's eyes are on Russia to make sure she delivers" on her obligations to the victims killed in the Ukraine plane disaster.
His comments come as David Cameron and Dutch counterpart Mark Rutte called for the European Union to "reconsider its approach to Russia" in light of evidence pro-Moscow separatists brought down the flight on Thursday.
Mr Cameron also spoke to Australian Prime Minister Tony Abbott, while Britain's Russian ambassador has been summoned to the Foreign Office.
The UK's response follows accusations pro-Russian separatists removed 38 bodies from the crash scene and attempted to destroy evidence at the site.
The Ukraine government said "terrorists, with the help of Russia, are trying to destroy evidence of international crimes," adding it had obtained data which showed bodies had been taken to a morgue in Donetsk.
Dutch Foreign Minister Frans Timmermans said the Netherlands was "angry" and "furious" by allegations bodies were being dragged around the site.
However, Sky's Chief Correspondent Stuart Ramsay, at the scene, said there were reports rebels had moved bodies on Friday, but body parts were now officially being removed by Ukraine emergency ministry staff.
Mr Hammond, who chaired an emergency Cobra meeting on Saturday, accused Russia of not doing enough to move separatists from the site.
"We're not getting enough support from the Russians, we're not seeing Russia using their influence effectively enough to get the separatists, who are in control of the site, to allow the access that we need," he said.
"This is not about Russia and the West, this is about the whole community demanding that proper access is made available to this site, the victims are properly recovered, and evidence is secured."
Ukraine's Security Council said 18sq km of the 25sq km had been explored and 186 bodies found, while there have been discussions between the two factions over the creation of a "security zone" around the crash scene following allegations of looting and evidence being compromised.
Concerns have been raised by Malaysia about the investigation as a team of international observers complained of being confronted by aggressive armed rebels.
A Ukraine Security Council spokesman said 15 pieces of military equipment were brought over the border from Russia into the eastern Luhansk region overnight.
Critically, the monitors have been unable to speak to anyone about the whereabouts of the jet's two black box voice and data recorders.
However, Alexander Borodai, head of the self-proclaimed Donetsk People's Republic, denied rebels had shot down the plane, found the black boxes, or removed bodies. But he said body parts which had fallen into people's homes had been taken away.
British experts are due to join the investigation at the crash site over the weekend.

Shoot-out in Paris metro after robber targets rare gold coin dealership,
A robber smashed into a rare coin dealership in central Paris, made off with two trays of gold pieces and then staged a shoot-out in a crowded metro station before being wounded and nabbed by police.
Coin dealer Claude Burgan said he had been opening his shop after lunch on Saturday (local time) when he was shoved to the ground and hit in the head by a thief who pushed his way in.
Mr Burgan, his head and shirt still wet with blood following the incident, told AFP he managed to lock the thief in the boutique.
"To escape he had to shoot at least twice into the glass window. He left with two trays of gold pieces worth about 100,000 euros," Mr Burgan said, standing on shards of glass outside the boutique.
The thief then fled into the nearby Grands Boulevards metro station in a crowded, tourist-heavy area, where police officers noticed him and began their pursuit, leading to an exchange of fire.
"The criminal took out his gun in the train," a witness said, adding that he heard at least 20 shots during the exchange with police.
Police said the man was apprehended after being shot in the arm during the shoot-out.
A spokesman said he was not in critical condition.

Gunmen have killed 21 Egyptian military border guards near the frontier with Libya, highlighting what security officials say is a growing threat from militants seeking to topple the Cairo government.
Security officials say the border region has become a haven for militants and the gunmen were smugglers.
But an army spokesman said on his Facebook page that "terrorists" - the term authorities use to describe Islamist militants - were behind the attack carried out on Saturday.
He said the soldiers were killed and four others wounded after fire was exchanged and a weapons storage facility was blown up by a rocket-propelled grenade.
The attack took place in Wadi al-Gadid governorate, which borders both Sudan and Libya. Security officials said two smugglers were killed in the clash.
Egyptian president Abdel Fattah al-Sisi has repeatedly expressed concerns about militants who are capitalising on the chaos in Libya to set up operations along the border.
